Greek Inspired Lamb Meatballs
You know when you have one of the weekday nights were you just want dinner to be easy??? Well I have those all the time. This was a Monday and those are my toughest days when I get off work. The night before I knew I needed to plan for something simple and easy so I headed to my refrigerator to check out what I had stashed.
I always like to keep a few simple items on hand that I can defrost and make up in a relatively easy fashion. Let’s be honest….Mondays are tough!! We need all the help we can get. Once I started digging around I found a one pound package of ground lamb and some frozen amazing pitas that I got at one of the local Greek restaurants. This is dinner!!
When I finally made it home Monday from my job, all i had to do was mix these little guys up, defrost the pita, make some homemade tzatziki and put it all on a salad.
The pita i brushed with some olive oil and sprinkled with some Zatar spice and let it bake for a few minutes in the oven to brown. The tzatziki recipe will soon follow but you can always find one on Pinterest that is quick and easy.

Greek Inspired Lamb Meatballs with Kalamata Olives

Greek Inspired Lamb Meatballs

Cook Time: 20 minutes
Total Time: 40 minutes

Greek Inspired Lamb Meatballs with Kalamata Olives

Ingredients

  • 1 pound of ground lamb
  • 1 egg
  • 1/2 cup panko bread crumbs (can substitute regular if needed)
  • 3 tablespoons of fresh dill
  • 2 tablespoons of fresh parsley
  • 1 teaspoon cumin
  • 1 teaspoon of dried oregano
  • 1/2 cup chopped kalamata olives
  • 2 teaspoons of Zatar spice
  • 1 medium sized clove of garlic, minced finely
  • 2 teaspoons of salt
  • 1/2 teaspoon of pepper

Instructions

  1. Preheat oven to 400 degrees
  2. Line large baking sheet with parchment paper
  3. Chop up the fresh dill and parsley add to medium sized mixing bowl
  4. Add dried cumin, oregano, olives, garlic, salt and pepper
  5. Add egg and mix spice and herb mixture with egg
  6. Add in ground lamp and gently mix with egg mixture. Do not overwork the meat.
  7. Gently pour in part of the breadcrumbs and continue to gently mix
  8. Keep adding breadcrumbs until you have a nice semi dry but not dry mixture. you may need to add more or less depending on the consistency
  9. Roll mixture in tablespoon size and place on parchment
  10. Bake for 20 minutes flipping halfway through

Notes

This can be served over a salad, with pita bread or delicious tzatziki.
